It’s very easy to make — just a bit of mixing and stirring, pop it in the oven, and, in under an hour, you’ll have a house smelling of sweet autumn spices and a delicious pumpkin sweet bread.
Ingredients:
1.5 cups coconut flour,
50 grams of walnuts,
1 tsp pumpkin spice,
1/2 tsp cinnamon,
1 tsp lemon zest,
1 tsp baking powder,
1 tsp vanilla extract,
1 tbs sweetener (I use a erythritol and stevia mix)
3 eggs
100 ml olive oil, (do not use extra virgin, it has too strong a flavor),
1.5 cups fresh pumpkin puree.
Process:
This is the simplest recipe:
Combine everything into a bowl and mix.
Bake at 180 degrees C for 40 minutes, then turn off the oven and let the bread cool.
Garnish with cream cheese and nuts as desired.
Enjoy with freshly roasted coffee.
