Shortcrust pastry, juicy cherries and tender sweet meringue. Your perfect cake for a holiday.
Ingredients:
Base:
70 grams almond flour,
50 grams ground walnuts (any keto nuts can be used),
2 egg yolks,
2 tablespoons sour cream or yogurt,
1/2 tsp sweetener,
Berry filling:
400 grams of cherries,
1 tablespoon sweetener,
1/2 teaspoon of Xanthan Gum.
Meringue:
2 egg whites,
1/2 tsp lemon juice,
1/2 tablespoon sweetener.
Process
Mix the dry ingredients for the base, add the yolks and yogurt. Mix everything. Put the base in the refrigerator.
Take 400 grams of seedless berries, add sweetener and Xanthan Gum to them. Stir everything and then cook on low heat until thickened (1-2 minutes).
Whisk egg whites with lemon juice and sweetener until firm peaks.
Line a baking dish with baking paper. Spread out the dough and bake at 180 degrees Celsius for 15 minutes.
Cool the base a little. Place the cherries on it and place the whipped egg whites on top.
Bake at 180 degrees Celsius for 15-20 minutes.
