Cottage Pie – a delicious comfort food ideal for mid-week dinners. This English classic has a deeply savoury beef mince filling smothered in gravy topped with creamy mashed cauliflower, baked until golden. One of the best cosy foods to make with ground beef!

Ingredients

500 g Cauliflower

50 g Butter

2 Egg Yolks

100 g Cheddar cheese

Salt and Pepper to Taste

500 g Beef Mince

100 g Button Mushrooms

100 g Green Beans

3 Cloves garlic

Medium Onion

1tsp Dried Thyme

1 Tbsp Fresh Rosemary chopped

70 g Tomato Paste

1 Tsp Worcestershire sauce

2 Tbsp olive oil

1/2 cup Beef Bone Broth (or Beef Stock)

Instructions:

For the mash topping:

Steam/boil the cauliflower till tender. I steam it in an Instant Pot. (Pressure cook for zero (0:00) minutes on high pressure, instant release the pressure. Gives consistent perfectly steamed cauliflower).

Blend into a puree. Season to taste with salt and freshly grounded black pepper.
Add 25g butter and 2 egg yolks. Blend until smooth.

Set aside.

For the filling:

Melt 25 g butter in 2tbsp’s olive oil over medium-high heat.

Add and fry the onions till soft. Add the garlic and fry till fragrant.

Add in the beef and continue cooking till the meat is completely browned. Ensure the mince is completely broken up.

Add in freshly chopped rosemary, dried thyme (or fresh), Worcestershire sauce and tomato paste. Stir through.

Add in the mushrooms and green beans, season to taste.

Add 1/2 cup beef bone broth, or beef stock, cover the pan and simmer for 10 minutes.

Spoon the meat into a baking dish, i used a 22 cm x 22cm dish. Cover with cauliflower mash, place a layer of cheddar cheese on top. Bake for 20 minutes at 200C.

Serve and enjoy.
