Juicy aromatic and spicy Christmas cake
Ingredients:
100 grams of coconut flour
2 tsp baking powder
1/2 tsp cinnamon
1/2 tsp dry ginger
1 tablespoon cocoa
200 grams of butter
2 tablespoons sweetener (erythritol and stevia)
4 eggs
40 ml whisky
100 grams pitted cherries
50 grams of candied orange peel (ketо option)
60 grams of any nuts (I have walnuts)
For garnish, Greek yoghurt with sweetener and cherries
Method:
Mix all dry ingredients.
Add sweetener to butter at room temperature and beat, adding eggs one at a time. Then add dry ingredients and mix. Add whiskey, cherries, nuts and candied fruits to the mixture. Mix everything thoroughly. Place in a baking dish on baking paper.
Bake in a preheated oven at 160 degrees C for 50 minutes, then turn off the oven and let stand for another 15-20 minutes.
Remove from the baking form and let cool to room temperature. Garnish with yogurt and berries if desired.
