I can not stress enough the absolute deliciousness of this sandwich nor how incredibly easy it is to make. Worth the cost of buying the molds. Macros can be found on the Ruled me page (link at the bottom)
**The Pancake Bun**
2 tablespoons pork rinds
1 tablespoon almond flour
1 large egg, beaten
1 tablespoon heavy cream
¼ teaspoon vanilla extract
2 tablespoons maple syrup
**The Filling**
2 ounces hot sausage
1 slice cheddar cheese
1 large egg
**The Execution**
Measure out 2 oz. Sausage in a silicone ring mold.
Cook until medium-well temp. in a pan over medium heat. Set aside in foil when done.
Grind pork rinds in a food processor until a powder is formed, then mix together with all bun ingredients.
Fill ring mold in pan with 1/2 batter. Cook on one side until browned, then remove mold and flip to cook other side. Repeat process until 2 buns are formed.
Add an egg to the ring mold and scramble lightly. Allow to cook until solidified.
Assemble with cheese, egg, and sausage. Enjoy!
