Ingredients:
-1 lb Shirataki Noodles (I used the penne variety)
-200 g frozen stir fry veggies (mixed bell peppers & onions)
-85 g frozen broccoli
-3/4 cup light cream (you can use heavy cream to reduce carbs further)
-35 g grated Parmesan cheese
Directions:
-Drain and rinse shirataki noodles
-Boil noodles for 3-4 minutes then drain
-Cook the noodles on a dry, hot pan (very important)
-Add in the frozen veggies and stir
-If necessary, drain the excess water from the frozen veggies
-Season the noodles and veggies (I used salt, pepper, paprika, cayenne, oregano, onion powder and garlic powder)
-Reduce the bear and add in the cream and mix together until cream thickens
-Turn off heat and add the cheese ***gradually*** and mix together
-Done!
