Preparation

  1. Melt the butter in a heavy frying pan and lightly fry the bacon until golden. Remove and drain on paper towels. Keep warm.
  2. Fry the onion slices until soft in the remaining fat. Add the apples, cored and cut into rings 1/2-inch thick. Cover and simmer for 5 to 10 minutes, shaking the pan from time to time to prevent them from sticking.
  3. Return the bacon to the pan and heat through. Season with pepper, sprinkle with parsley and serve.
  • This dish is excellent with mashed potatoes or fried eggs.
