Preparation
- Melt the butter in a heavy frying pan and lightly fry the bacon until golden. Remove and drain on paper towels. Keep warm.
- Fry the onion slices until soft in the remaining fat. Add the apples, cored and cut into rings 1/2-inch thick. Cover and simmer for 5 to 10 minutes, shaking the pan from time to time to prevent them from sticking.
- Return the bacon to the pan and heat through. Season with pepper, sprinkle with parsley and serve.
- This dish is excellent with mashed potatoes or fried eggs.
