This is a simple soup that is suitable for the keto diet.
* 2 cups homemade chicken broth
* 1 tablespoon Great Lakes gelatin (optional, but very nice)
* 6 cherry tomatoes, quartered
* 1 teaspoon sesame oil
* 1 teaspoon soy sauce (the Haku brand Sakura is ideal)
* pinch of white pepper
* salt to taste
* 2 eggs, beaten
* 1/4 avocado, sliced thin
* chopped green onions
Beat your eggs in a small bowl and set aside. Add the broth to a sauce pan, and sprinkle in the gelatin, stirring gently. Add the tomatoes, and bring the pan to a simmer. Add the oil, soy sauce, salt, and pepper.
When you are happy with the taste of the broth, slowly pour in the eggs, while stirring well. Pour the soup into your serving bowl, and add the onion and avocado.
(You can make a really nice chicken broth using wings instead of used bones. Roast them until you have a good color, and put them in your instant pot with just enough water to cover. Pressure cook for two hours.)
