So, there are 3 wines we have available (they are Repoured and I’d like to finish them) and 3 different evening meals with which to combine them with. A bit of an odd setup but I believe it can work.

The 3 wines are:

* Sherry Valdespino Single Vineyard Inocente Fino Dry

* Pio Cesare Barbera d’Alba 2018

* Reichsrat von Buhl Riesling Brut 2018 German Sekt

The 3 meals are:

* Black Tripe (also known as Black Pudding Sausage or Blood Sausage I believe) with an Apple Cucumber Radish Salad and Mustard Yogurt Dressing (see also https://cleanfoodcrush.com/crisp-creamy-cucumber-apple-salad/#zrdn-recipe-container)

* Baked Eggs on a bed of roasted cherry tomatoes (basically a Shakshuka type dish, see also https://cookieandkate.com/baked-eggs-on-roasted-cherry-tomatoes/ )

* Lentil Balls with Grilled Cabage and Tahini Dressing (see also https://www.karolaskitchen.be/warm-eten/linzenkruidenballetjes-met-gegrilde-slaharten-en-een-sesam-citroensausje/ )

So, unusual dishes and unusual way to match.

I believe the Sekt would go with all fairly well but would be best suited to the Blood Sausage and Apple Cucumber Salad, as Riesling is nice with sausage and a good match with the salad.
The eggs could go both with a fino sherry as the barbera I think. Same for the Lentil balls.

What do you think? How would you match them? Or would you say that this is a bad idea and I’ll need to pick another wine for one of the dishes?
