I recently had the privilege of dining at Arpège, a vegetable-centric restaurant in Paris. One of the most famous restaurants in France, Arpège has held three Michelin stars since 1996 and is currently ranked #23 on “The World’s 50 Best Restaurants.” The chef, Alain Passard, went vegetarian in 2001 and grows all the produce he serves himself in his personal gardens. The guy is a rockstar who has created a space for vegetarian and plant-based meals at the highest level of haute cuisine.
