I’m making slow steps to cut out meat and diary from my diet. Right now my diet is 75% plant based and I’m hoping to transition 90% to plant based by the end of the year. That also includes trying to get rid of processed carbs including my sweet tooth.
Yesterday I thought I’d try putting some veg on the griddle (onion, peppers, aubergine) with a little tandoori sauce, baked sweet potato with pink salt, and half an avocado.
Wasn’t entirely sure how it would turn out, but to my surprise it was very tasty. I’m probably the worst cook in the world, so I could really do with simple plant based recipes that are warm – I’m comfortable doing cold salads etc, but sometimes you just want that hot food.
I’d be grateful for any links for making simple, warm, plant based meals, ideally with more protein and fibre.
