The liquid starter, which I will refresh in two or three days, with more flour, to make “biga.”
Use 50 grams flour
100 grams water…
Mix well in jar and pour into gravy boat making sure not to dirty the sides of the boat.. then put it on top of something like this spoon rest and cover with a napkin. Note time and wait for it to separate, foam, settle leaving smelly top layer.
