Decided to make something a little more calorie heavy this time, but still within my diet goals. Turned out really well!
I meal prep because it is cost efficient for me and makes it easier to stay on track with my fitness and diet goals.
**Storage**
Immediately freeze anything you won’t eat after 4 days. I’m eating 2 a day.
My containers are from tjmaxx. While the clear ones are target brand ones.
**reheating**
Sometimes I don’t mind eating it cold. Still good to me. When I do reheat this I will air fry the chicken.

**Ingredients:**
– 7.7 lb chicken breast or thigh
– 15 cups of day old rice
– green onions
– onions
– 5 carrots
– 2 cucumbers
– 2 boxes of panko
– salt, pepper, seasonings of choice
– almond milk
– apple cider vinegar
– flour
– sesame oil
– soy sauce
– peanut oil
– 12 eggs
**Recipe**
**Katsu**
1. Butterfly your chicken if it is breast
2. Tenderize your chicken
3. Salt your chicken and keep in fridge for 1 hour (optional)
4. Set up your breading station
5. Put seasonings of choice inside panko bowl
6. Dip in flour
7. Dip in almond milk mix
8. Dip in panko mix
9. Repeat 6-8
10. Heat peanut oil on pan
11. Once hot, start frying chicken on medium until fully cooked.
12. Alternatively you can cook the outside/breading in the pan and cook the chicken into an oven preheated on 200 F
13. Cut chicken in strips
**buttermilk mix**
For the breading I mixed 2 cups of unsweetened ROOM TEMP almond milk with 2.5 tbsp of apple cider vinegar and let sit for a few minutes.
**Fried Rice**
1. Scramble 7 eggs into little pieces and set aside.
2. Whisk 5 eggs and mix with rice.
3. Sauté your onions and garlic then cook your carrots
4. Pour rice mixture in heated wok and stir fry until rice starts separating.
5. Season as needed, I use salt and pepper with a tiny bit of soy sauce and sesame oil as I’m trying to make this light. Throw in your green onions as well.
6. When finished, turn off heat and mix in cucumbers. You don’t want to cook these with the carrots because it will excrete a lot of moisture and become bitter in the fridge.
