Debbie @ Chew on Vegan has an awesome [recipe for savory potato waffles](https://www.youtube.com/watch?v=7HKsgn64Xa8) and I’m trying to think of some good toppings.

So far, I’ve come up with:

* My version of [McDougall mushroom gravy](https://www.drmcdougall.com/recipes/mushroom-gravy/) (which really just uses more mushrooms, tamari instead of soy sauce, dry white wine during the sauté, and _no corn starch_ (see below for more on that))

* Israeli salad (diced cucumbers + diced tomato + lemon juice)

* Hummus (but see below)

Any suggestions for toppings would be much appreciated (just “hot sauce” is great but doesn’t really count imho).

If anyone has ideas for **toppings that do NOT contain wheat, barley, rye, oats, spelt, or [kitniyot](https://oukosher.org/passover/guidelines/food-items/kitniyot-list/)** (foods like beans, lentils, corn, and rice) then that would be amazing because I’m working on my Pesach (Passover) menu and those foods are strictly forbidden.
