My grandmother’s meatballs in tomato sauce

    **Meatballs**

    **INGREDIENTS:**

    * *For the Meatballs:*
    * 8 pieces of bread.
    * 2 lbs. of ground beef
    * 4 eggs
    * 1 cup of grated Parmesan
    * ¼ cup of parsley
    * 2 cloves of minced garlic
    * 1 tsp. oregano
    * 2 tsp. salt
    * Pepper to taste
    * *For the Sauce:*
    * 1 ½ cups chopped onion
    * 28 oz. can of crushed tomatoes
    * 2 cloves minced garlic
    * 4-6 oz. tomato paste
    * 2 cups water
    * 2 tbsp. white sugar
    * 1 tbsp. salt
    * 1 tbsp. oregano
    * ½ tsp. pepper
    * 2 bay leaves

    **DIRECTIONS**

    1. Soak 8 pieces of bread in water for 2 minutes.
    2. Squeeze the water out of the bread and mix with 2 lbs. of ground beef, 4 beaten eggs, 1 cup of grated Parmesan, ¼ cup of parsley, 2 cloves of minced garlic, 1 tsp. oregano, 2 tsp. salt and a dash of pepper.
    3. Mix well and form into meat balls, then brown slowly in a pan.
    4. To make the sauce: Sauté onion and garlic in a pan, then stir in rest of the ingredients. Simmer uncovered for 30 minutes.
    5. Remove bay leaves and add meat balls, then cook for 30 minutes more.

  4. Sorry, OP, there was a rude reply here but I have to agree.

    Water-soaked bread?
    Onions are chopped way too big.
    Where did all the sauce go? All I see in the photo are meatballs, onions and dry pasta.
    Waaaay too much sugar.
    What are those yellow things on top? Garlic? Tomato seeds?

    I’m sure it’s tasty and nostalgic being your grandmother’s recipe, but this looks so unappetizing.

    I don’t know why people feel the need to be critical about someone’s recipe they never tried and was posted out of a kind gesture. Smh

    Looks good. Only thing I’d definitely change is the sugar isn’t necessary if you cook down the onions more and use a can of quality San Marzano tomatoes. It’ll be plenty sweet enough to cut acidity. You then cut down on the unnecessary added sugar. This coming from a diabetic lol.

    Looks good, but something I’ve recently learned that’s been an absolute game changer for pasta.

    Save the salted water you cook the pasta in, and when everything is ready, add one portion of sauce/meatballs/pasta to a hot pan with a splash of pasta water. Toss until the sauce thickens and doesn’t look watery. Should only take like 2-3 minutes. Repeat for each portion.

    It will completely transform your pasta.

    Good for you for getting a family recipe. My mother in law passed and never gave her recipe for anything to anyone. It is sad. We have tried but can’t recreate her meals.

    Please OP for the love of god, finish your pasta in the sauce along with some reserved pasta water. It’s a game changer.
