I used 3 cups of white rice. I used 2 whole bunches of cilantro chopped up. Then I used 3 limes. But this can be adjusted to taste or how many are eating. I did add a good pinch of kosher salt to my rice before I cooked it. We used it tonight for burrito bowls but it can be eaten on its own. My husband says it’s better than chipotle’s cilantro lime rice.

This looks yummy! I can’t eat cilantro, tastes like soap to me, so I use coconut milk & lime juice in place of water & add the zest as well. Makes the rice nice & creamy & amps up the flavor. 😊

Why would you do that to the rice… WHAT DID THE RICE EVER DO TO YOU ( this isn’t a hate comment I just prefer plain rice with butter and salt)

Can you explain how you cooked the rice in more detail? It’s so fluffy.
My rice – despite rinsing it, using different brands and types, and cooking it on the stove or in a rice cooker, always goes mushy and sticks together – not in a good way. It’s gross. I’ve read internet recipes and truly, I am not sure what I’m doing wrong. Clearly you’ve got it figured out though!
