High-protein Shrimp and Lentil Stew made using mostly frozen and pantry ingredients

    This pressure cooker stew is so easy to whip up when I am low on groceries. Most of the ingredients I tend to have in the cupboard and I always have a 12oz bag of shrimp in my freezer that you can get for about $5!

    **Ingredients:**

    * 1 tbsp oil
    * 1 clove garlic
    * 1 small onion
    * 2 celery sticks
    * 2 thyme sprigs or 1 tsp dried thyme
    * 1 cup lentils
    * 8 oz shrimp, deveined and peeled
    * 2 cups vegetable broth
    * 1/2 cup can diced tomato
    * 1 tbsp tomato paste
    * 1 tbsp soy sauce
    * Salt
    * Pepper

    **Steps:**

    ​

    * Chop up the celery, onion, and garlic.

    * Set instant pot to sauté setting and the olive oil, garlic, onion, and celery. Sauce for about 2 minutes, or until ingredients are softened.

    * Add in the thyme, lentils, soy sauce, shrimp, diced tomatoes, tomato paste, and vegetable broth. Season with salt and pepper.

    ​

    * Lock instant pot lid in place and set to high pressure on high for 7 minutes.

    * Once complete, quick release. Serve.
