Potatoes & Eggs with spring onion

    Springonion ~ 20 cents worth
    Potatoes ~ 1 EUR
    2 Eggs ~ 1 EUR
    Seasoning: Salt, pepper, Paprika powder/ Chili…. Whatever you like, garlic powder is always a great choice in my opinion ~15 cents
    Butter &/ oil ~ 30 cents

    I always pre-cook my potatoes in salt water- I put all potatoes in a pot and start heating them up on full heat until boiling, turn down heat as soon as cooking for 20-25 min – depending on where you live … pretty much!
    When cooked I let them cool down and Peel them off afterwards (you can peel them beforehand, too).
    I cut them the size you See them on the picture, since theyre pre cooked the slices dont Need to be the same exact thickness but I suggest to cut them similarly for taste reasons!
    Then I cut the spring onions in small rings.

    Crack the eggs in a cup or such. Scramble the eggs and season them with salt, Pepper and Paprika powder.

    Afterwards or before scrammbling the eggs that put a little oil and / or butter in the pan and heat it on medium heat for 2-3 mins.
    Then cook the scrammbled egg ready and put it on a plate, empty the pan and use it for the potatoes! Clean it out with a tissue and put some more butter in.

    Then put the sliced potatoes in and cook them so they are cross like on the picture, season the potatoes, add the spring onions, steer, and add the scrammbled egg! Tada ready, easy SUPER DELICIOUS and cheap.

    -precooked or uncooked potatoes go in the pan
    -when its almost done/crispy
    –cut up garlic thin and throw into pan maybe with some oil and xook until fragrant
    -add eggs and scramoke everythibg
    -serve when egss are done the way you like

    goes great with bread. season with paprika / chilli or whatever

    I’ve been eating eggy potatoes for days now. It’s like the only thing I can stomach ATM (with fruit salad) cause it’s so tasty and has a decent amount of protein. I added some ground beef and gravy today though

    That looks fabulous. I wish I could master the browned potatoes trick. Mine always break up too much and/or just don’t brown.
