I thinly sliced them then tossed with some salt and then used cheese cloth to strain out the excess water. Used that water in place of the water in the recipe.
I loved the onion ones, but saw this lovely zucchini for $1.49 today and had to try it! I did add some thinly sliced i onions, because the zucchini wound up being a lot less after squeezing the liquid out.
Don’t skip the dipping sauce!

$8.50ish is what I spent (but would be a lot more if you needed all the sauces and spices/paste) and I’ll easily get 6/8 meals out of the meat.
Going to shred some of the pork tomorrow and make rice bowls with the pork, 6 min egg, furikake, kimchi, quick pickled cucumbers and scallions! All I need is the cucumber, and they’re 3 for $2, but I only need one! 🙂
