    **Ingredients**

    * Ginger
    * Spring Onions
    * 2 Eggs
    * 1 Bowl of Chilled Cooked Rice
    * 1 Tablespoon Cooking Oil
    * 1 Teaspoon Salt

    **Cooking Steps**

    1. Crush the ginger and dice the spring onions
    2. Whisk the eggs in a bowl. Heat the wok with 1 tablespoon of cooking oil and fry the eggs under medium heat until it is close to fully cooked
    3. Put the cooked rice into the wok and stir fry it with the eggs until it is a bit dry.
    4. Stir fry the rice with the crushed ginger for 1 minute.
    5. Add the salt and continue the stir frying for 30 seconds
    6. Stir fry the spring onions with the rice inside the wok for 30 seconds and serve

    **Cooking Tips**

    1. Other ingredients like shallots and seafood steaks can be added to the dish
    2. To prepare the chilled cooked rice, cook the rice a day before cooking the fried rice, put it in the container and cover it with a lid. Cool it down under room temperature and store it in a fridge.
    3. A successful stir frying is that the wok is still dry after the dish is served.
