Earlier version was a beef chintan, but I decided to do a beef paitan instead. Birria consomé is is more like a chintan but still full of beef fat, so I felt a paitan would better incorporate the fat without feeling like a fat bomb that a full sip of consomé could feel. I also put a whole quesabirria taco in the bowl before as a cheeky, fun topping but people had a serious problem with it for some reason. So I left out the taco. The egg is standard ajitama. I also incorprated wagyu tallow into the aroma oil

I’ve been tinkering with a birria ramen for some time now, and posted a [nearly completed recipe](https://www.reddit.com/r/ramen/comments/vnnl6d/homemade_birria_ramen/) a few months ago. This is the bowl that I’ve settled on and will be selling at my next ramen pop-up.
