Prep time: 5 mins Cooking time: 10 mins Serving size: makes 2 large portions **Ingredients:**
* 7 oz orecchiette ($0.46) * 6 oz peas ($0.42) * 2 Tbsps sour cream ($0.18) * 3 slices of prosciutto ($2.11) * 2 cloves garlic ($0.12) * 2 stalks of green onion ($0.16) * Parmesan cheese, to taste (~$1.00) * 1 tbsp olive oil ($0.04) * 1 pinch salt * 1 pinch black pepper
**Total cost for 2 servings: $4.49**
**Instructions:** **Step 1:** Set a large pot over high heat for the pasta. Thinly slice 2 cloves garlic and 2 stalks of scallions. Finely grate some Parmesan cheese.
**Step 2:** Cook 7 oz pasta according to package instructions until al dente. Approx 2 min. before the end of cooking time, add the 5 oz peas. Once the peas are warmed through, reserve a large mug of pasta water then drain the pasta and peas in a colander.
**Step 3:** While the pasta is cooking, add 3 slices of Parma ham to a cold pan. Heat over medium heat until crisp on one side, then flip and repeat. If your Parma ham is quite lean, add a little olive oil to help crisp it up. Remove ham once crispy and let drain on a paper towel-lined plate.
**Step 4:** Add a little olive oil to the same pan used for the ham and fry the 2 cloves sliced garlic until almost golden, over medium heat, approx. 2 min.
**Step 5:** Add cooked pasta and peas into the pan, followed by 2 tbsp sour cream. Toss well until you have a silky sauce, adding some pasta water to help coat the pasta.
**Step 6:** Season generously with pepper. Once off the heat, add a generous amount of grated Parmesan on top and stir though.
**Step 7:** Serve in bowls and break pieces of crispy Parma ham over the top, garnishing with scallions and extra Parmesan, if desired. Enjoy
