– season your pork loin with Salt & Pepper and sear with butter, fat side down first. Flip over & add large sliced onion to your skillet.
– while searing is happening, large dice 1 sweet potato & 2 crisp apples. Season with salt & pepper & a spritz of olive oil.
– when pork & onions are a lovely shade of brown, add to baking dish, placing loin fat side up. Fill your baking dish with potatoes, apples & browned onions.
– bake all @ 350 for 45 minutes or until internal temperature is over 140*F. Then add nutmeg, cinnamon and fresh thyme to veggies & mix well.
– cover pan with foil and reduce oven to 225*F. Continue cooking for 1-2 hours until super tender.
