Don’t often post on here but today I managed to pull together a roast dinner for five, while absolutely sky high.

Roast Chicken – Roasted
Beef Joint – 3.5 hrs @ 133*C, patted dry, seared with avocado oil on a cast iron
Broccoli/Peas/carrots/sweetcorn/greens
Roast potatoes/parsnips
Yorkshire Puddings, stuffing, chicken gravy, beef gravy (both using meet juices)

TL;DR: Woke up 09:00, got high, told needed to make Sunday roast for five. Fucked the absolute shit out of a beef joint and savaged a chicken. Shit went well. Currently drunk in the pub.

    No bueno for me looks a bit dry and overdone the sear isn’t great either

    Since you asked the other dude for recommendations, I’ll say your pan needs to be hotter for the sear. Use cast iron if you’ve got it too. You don’t list the cut of meat so it’s tough to comment on the duration of sous vide, but it looks like a cut that could use more than 3.5hr.

    If you and your guests enjoyed though that’s success. Keep at it!
