**Ingredients** • Cooking oil – 6 tbsp • Cardamom – 8 • Black Cardamom – 3 • Cinnamon – 2 sticks • Black Pepper – ½ tbsp • Bay Leaves – 2 • Mutton – 1 kg • Ginger-Garlic paste – 1 tbsp • Turmeric powder – 1 tbsp • Kashmiri Chilli powder – 2 tbsp • Coriander powder – 1 tbsp • Cumin powder – ½ tbsp • Mutton Masala powder – 2 tbsp • Cashews – 15 • Green Chillies – 6 • Tomatoes – 2 medium sized – quartered • Coriander leaves – 1 handful • Coconut Milk – 200 ml . Salt to taste

**Instructions**
MAKING CARAMELIZED ONIONS 1. Take a frying pan and add enough oil to fry the thinly sliced Onions (3) 2. Caramelize 3 medium sized Onions and keep aside MAKE CARAMELIZED ONION PASTE 1. To a mixer jar, add the caramelized Onions 2. Add 15 Cashews 3. Add 6 Green Chillies 4. Add 2 Medium sized tomatoes 5. Add one handful of Coriander leaves 6. Grind it into a thick paste without adding water 7. Set aside MAKING MUTTON GRAVY or MUTTON MASALA 1. To a heavy bottomed kadai or wok, add 6 tbsp of cooking oil 2. Add 8 whole Cardamom 3. Add 3 whole Black Cardamom 4. Add 2 Cinnamon sticks 5. Add 1/2 tbsp of crushed Black Pepper 6. Add 2 Bay leaves 7. Fry for a few seconds 8. Add Mutton (bone-in mutton is recommended) 9. Adjust the flame to high 10. Add 1 tbsp of Ginger-garlic paste 11. Fry for 1 – 2 mins 12. Add 1 tbsp of Turmeric powder 13. Add 2 tbsp of Kashmiri Red Chilli powder 14. Add 1 tbsp of Coriander powder 15. Add 1/2 tbsp of Cumin powder 16. To this, add 2 tbsp of Mutton Masala powder 17. Add Salt as required 18. Mix well 19. Adjust the flame to Low 20. Cook for 10 mins 21. Keep it covered 22. Remove the lid after 10 mins 23. Mix 24. Ensure the flame is set to Low 25. Add the caramelized Onion paste 26. Combine well 27. Water – 1 cup 28. Ensure that the gravy is loose 29. Cook for 15 mins 30. Adjust the flame to Medium-Low 31. Remove the lid after 10 mins and give it a stir 32. Cook for 5 mins 33. Adjust the flame to Low 34. Add Coconut milk and combine 35. Cook for another 10 mins depending on the meat 36. Garnish with Coriander leaves 37. Serve hot

26. Combine well
27. Water – 1 cup
28. Ensure that the gravy is loose
29. Cook for 15 mins
30. Adjust the flame to Medium-Low
31. Remove the lid after 10 mins and give it a stir
32. Cook for 5 mins
33. Adjust the flame to Low
34. Add Coconut milk and combine
35. Cook for another 10 mins depending on the meat
36. Garnish with Coriander leaves
37. Serve hot
