    I just got cooling racks too and they are so worth it to keep the crust from sogging!

    I got the quarter sheet baking trays with the wire rack inserts. Seems ‘fancy’ but it’s worth it IMO

    Cooling racks should be in every pizza place – oven to box is sog city
