**Recipe:**
* Pasta 400gr / 14oz * Cabbage 500gr / 17oz * Guanciale 200gr / 7oz * Parmigiano Reggiano to taste * EV olive oil, salt, pepper to taste
**Instruction:**
1. Wash the cabbage leaves then cut them into strips 2. Guanciale in the pan let it brown for 3-4min then keep aside 3. Put a pot with water on a medium heat 4. Add in the same pan garlic and cabbage salt and a little bit of water cooking for 8-10min 5. Grate the parmigiano reggiano cheese 6. Drain the pasta al dente in the pan adding guanciale and a little bit of pasta water and mix well with high heat 7. Turn off the heat adding parmigiano and EV olive oil to taste 8. Serve adding Parmigiano Reggiano
