These black eyed peas have found themselves at my local market. Really simple but takes some patience to prepare them if bought fresh. They just need to be boiled, add a zucchini in the mix and a serving of 215g of these bad boys with 85g of boiled zucchini with 2tbs lemon juice and a tsp olive oil (maybe a pinch of salt too) really make a filling plate of food and a healthy lunch! Relatively high in protein and fiber. You should try it 😁
