**Ingredients:**
* 800 grams of pumpkin * 1 lime * 400 grams of sugar * Zest of 1 orange * 1 cinnamon stick * 1 tbsp of powdered sugar * 1 tbsp of corn starch
**Steps to make:**
1. Peel the pumpkin and cut it into small cubes. 2. Squeeze the juice from 1 lime. Mix the sugar, 100 ml water and lime juice in a saucepan. Bring to the boil over medium heat. 3. In a large saucepan, transfer the sliced pumpkin, add the orange zest and cinnamon stick. Pour over the syrup from step 2. 4. Bring to a boil over medium heat, stirring frequently. When the syrup is boiling, turn off the heat, cover and wait until the pumpkin has cooled to room temperature (you can place it outside to cool). Repeat this step 3-4 times so that the pumpkin is soaked in the syrup, but not overcooked. 5. Then, while the syrup is hot, drain it into a separate jar. It can be used in other recipes or just as a topping. 6. Place the pumpkin slices on a baking tray on top of baking parchment. Bake in the oven at 90°C (195°F) for 2-3 hours. 7. When the pumpkin is baked, mix together the cornstarch and powdered sugar and coat the pumpkin in it. The candied pumpkin is ready! You can use them as candy or add them to pastries. Store in a closed container.
