Very simple but delicious mini breakfast prep. I generally have iced high protein coffee first thing in the morning and then sometime around 11 or noon I eat breakfast or lunch.
No recipe for this but the potatoes, onion, and red bell pepper were tossed with a bit of olive oil, spread out on the parchment lined baking sheet, seasoned with pepper and garlic powder, then cooked for about 15 minutes at 425°.
The sausages are from a local butcher and are so good. They were cooked in a frying pan then left alone for about five minutes to rest then sliced. While the sausages were resting I scrambled six eggs. That’s it! Easy and quick.
