So I found a 1.2 kg beautiful beef roast at my local grocery store for $15.. I’m planning 3 meals with it. Here’s the first…some of the yummiest stew. This is the first and I’ll post the others in the coming days(beef wellington and a pot roast with squash and root veggies and dumplings are the other 2 I’m planning)
1 large can and 1 small can diced tomatoes 1 can tomato paste 4 carrots 2/3 large potatoes Half an onion Garlic Spices…Cumin, black pepper, garlic powder, parsley, oregano, paprika, salt and either a few dashes beef broth or a couple Oxo cubes.
Add cans of tomatoes and tomato paste. Ad about 3-4 times water to tomato paste. I like to crush the tomatoes a bit more. Peel and chop carrots and potatoes. Add spices to your liking. Cube and brown the beef with the onions and garlic. Season the beef while browning. Add to pot and slow simmer for 3-4 hrs and you have a cheap, filling Delicious meal for a cold blustery winter’s day that will feed a few and cost around $10 to make.
