Looks delicious overall but what is the dry couscous looking bowl in the 3rd picture?

Here’s the menu. I’ve been to a few Michelin starred places in Seoul (some amazing, some lacklustre), and while this place doesn’t have one yet, I suspect it will in the following years, it only having opened rather recently. Rather than going for “elevated” French presentation or fusion, this place kept it fairly simple using entirely domestic ingredients and traditional flavors – each dish was just the most refined version of itself, without any frills.
