Oats & Banana Muffins.. sugar free

    Ingredients

    • 1 cup rolled oats

    • 3 pcs ripe bananas

    • 1/4 cups milk

    • 5-6 pcs dates

    • 1 egg (1 tbsp yogurt for eggless)

    • 2 tablespoons honey

    • 2 tablespoons butter

    • 2 tablespoons sunflower seeds

    • 1 teaspoon baking powder

    • 1/2 teaspoons baking soda

    • 1 teaspoon cinnamon powder

    • 1 teaspoon sea salt

    Instructions

    1. Peel the bananas and mash them with a fork. Take extra ripe bananas for moist and fluffy cupcakes.

    2. Take the rolled oats and grind them into fine powder. Take out the oats powder into a large bowl.

    3. Add the butter and milk. Mix until you get a wet dough like consistency. Add the egg (1 tbsp yogurt for eggless). Start whisking for 2 min until all mixed together.

    4. Add honey, baking powder, baking soda and the mashed bananas. Whisk for another 2 min. The batter should be nice and lump-free.

    5. You can use any fruits or nuts for this muffin, I used dates. Add the dates, you can chop/tear up. Add the sunflower seeds, cinnamon powder and sea salt. Mix the nuts and dates with cut and fold method.

    6. Take a cupcake tray. Line with cupcake moulds. Pour 2 tbsp of batter into each cupcake moulds. Bake for 10-15 min at 180°C or until a tooth pick comes out clean.
    7. Oats muffins are ready to be served. Easy and guilt-free dessert made with Love !!

  2. Can I skip the dates and skip the sunflower seeds?

    I am tempted to add chocolate chips instead of dates and sunflower seeds.
