**Ingredients:**
* 5 lemons * 120 grams (2/3 cup) of sugar * 80 grams (2/3 cup) of corn starch * 10 grams (1 tbsp) of butter * A pinch of salt
**Cooking method:**
1. Remove the zest from 1 lemon. Then squeeze the juice from all the lemons (you should get about 260 ml / 1 cup of juice). 2. Mix the lemon juice, zest, sugar and starch in a pan. Then cook over a medium heat, stirring constantly. 3. When the juice is hot, add a pinch of salt and oil. Stir and reduce heat to low. Continue cooking until the juice has thickened (about 15 minutes). 4. Transfer the lemon mass to food foil, form into a small rectangle, wrap and leave to cool at room temperature for 3 hours. 5. When the dessert has cooled, cut it into cubes and coat each one in sugar. Bon appetit!
