1. preheat fan/convection oven to 170degrees Celsius (350 f)
2. Line your baking pan with baking paper or waxed paper (I use a 20 cm square pan or a 30cm by 15cm rectangle sheet pan which cooks faster)
3. Soften 250g (8 oz) butter and cream with 2 and a quarter cup of sugar (I go 1 cup raw and 1 and 1/4 white – sometimes I make it 1 and half white).
4. Beat in 4 eggs and a teaspoon of vanilla flavouring/extract.
5. Add a pinch of salt. Sift in 3/4 cup of cocoa powder and combine thoroughly using a spatula.
6. Sift in 1 and a half cups of flour with 1/2 teaspoon of baking soda. And fold in gently until there are no streaky flour lumps. Add in a cup of chocolate chunks (I chop up a bar of my fave dark chocolate.
7. Pour into the tin (this is a thiccc batter, you will need a spatula) smooth the top as much as you can to push the batter to the corners. Bake for 25 minutes for a fudgie brownie and 28 minutes for crisper edges. You will smell doneness around the 20 minute mark.
