Turkey breast with pesto, celeriac-parsnip puree and apple-leek salad

    **INGREDIENTS**

    * 4 turkey breasts
    * Salt&Pepper
    * Butter

    *Pesto:*

    * 40g fresh basil leaves
    * 2 tablespoons pine nuts
    * 2 garlic cloves
    * 1/2 cup olive oil
    * 1/2 cup grated parmesan cheese
    * a pinch of sea salt

    *Apple-leek salad:*

    * 1 leek
    * 2 sweet apples
    * 2 tablespoons mayonnaise
    * 2 tablespoons yoghurt
    * Salt & Pepper
    * Lemon juice of half a lemon

    *Celeriac-parsnip puree:*

    * 1 celeriac
    * 2 parsnips
    * Milk or almond milk
    * Butter
    * Salt&Pepper
    * Nutmeg

    **DIRECTIONS**

    *Pesto:*

    1. Add the basil leaves, pine nuts, and garlic in a food processor and mix them until they have a fine texture.
    2. Slowly add the olive oil while your food processor is still blending
    3. Add the cheese and sea salt and mix very briefly until the cheese is well mixed with the rest.

    *Apple-leek salad:*

    1. Clean the leek and cut into thin slices
    2. Clean the apple, remove the skin and the core and cut the apple into small bits
    3. Mix the mayonnaise, lemon juice, yoghurt and spices a mix this with the apple and leek

    *Celeriac-parsnip puree:*

    1. Remove the skin of the celeriac and parsnip and cut them into equal-sized cubes.
    2. Cook or steam the cubes until they are soft enough to puree them
    3. Add the cubes to a pot and add milk, butter, and spices to your liking.
    4. Make the puree, taste, and add more milk, butter, and spices if needed.

    First, prepare all before mentioned dishes.

    Season your turkey breast with salt & pepper and bake in the pan in butter until the turkey breast is ready.

    Place the puree on a plate and put the turkey breast on top. Sprinkle some green pesto on the turkey. Add the apple-leek salad as a side dish. You can also serve any other salad that you like with this dish.

    That looks wonderful. I never thought of pesto with turkey but I bet it goes very well.
