Recipe:
This is a big batch so I start with about 8 cups of turkey stock. You could make less or add some more water if you don’t have 8 cups.
8 cups turkey or chicken stock, 2 TBSP butter or oil, 2-3 carrots cut into bite sized pieces, 2 -3 stalks of celery cut into bite sized pieces, 2 boxes of Ben’s Long Grain and Wild Rice original ( only one packet of the seasonings), one cup of cooked turkey, 2 cups of milk.
In large pot, melt butter and then add carrot and celery. Allow the vegetables to soften. Add turkey stock a little at a time to allow it to heat thoroughly. Bring to a boil and then lower to simmer about 10 minutes to further soften the veggies. Add 2 boxes of the rice and one packet of seasoning ( I found 2 packets to be too salty. You could eliminate it all together and season in your own way). Cover and simmer 20 minutes or until rice is cooked. Add turkey and milk and heat thoroughly.
