Huevos Rancheros style nachos. Would’ve been just “huevos rancheros”, but I’m at the bottom of my bag of tostadas and they’re all broken up.
I tracked this all in MFP, but it’s a really simple and customizable meal. Two tostada chips topped with refried black beans (I made it really quickly with onion, spices and a can of black beans), ground taco meat (I made mine from tvp), 2 eggs, badly made pico de gallo, an ounce of cottage cheese, tapatio, lemon juice and 20 grams of avocado. A bigger breaking than I normally make, but it’s super filling, not too heavy, and filled with tons of protein and fiber.
