It’s not exactly for a shoe-string budget but it’s only 2.99 at my grocery store and wow it has been a game changer! I add a healthy handful to my lunch wrap along with some mayo and seasonings and suddenly I’ve got a deli-quality sandwich (ish) for not so much more than I was spending before. I also love that I’m getting extra veggies!

I agree, and if you have a spicy tooth, add any pepper 🌶 you can handle: I use Serrano peppers with a vinegar dressing for my slaw mixes.
Recipe for the tofu cheese & slaw sandwiches I made this week (makes 4 sandwiches):
Ingredients:
1 block tofu
Olive oil
Shredded mozzarella cheese
Burrito size tortillas
Slaw (pictured)
Garlic, onion, & cheese “pizza” seasoning
Instructions:
1. Cut tofu block into 8 slabs; coat in thin layer of oil and season with seasoning, salt, and pepper. Bake for 15 min each side or until lightly brown and cooked through. Set aside to cool and/or refrigerate.
2. Assemble sandwiches night before eating; set out 1 tortilla, add handful of cheese, layer on 2 slabs of tofu so that they barely overlap, add handful of slaw, squeeze on the mayo, sprinkle on a bit more of the seasoning, and wrap up; repeat for other sandwiches as needed.
Totally just made this up this week but it turned out really tasty! I’m definitely using this slaw for other sandwiches I make, including my hummus wraps and such.
