We used to live near an ALDI grocery store where we could buy vegetarian escalopes (like a schnitzel). I think they were made with seitan but I can’t remember. They were great. For Christmas dinner I’d like to try to replicate them using frozen tofu to get the chewier texture. I’ll be freezing the tofu in the package rather than pre-cutting, pre-draining, etc. as I’ve heard this is the best way to toughen them up. I’ve also heard that microwaving the frozen tofu is the best way to recreate the chewy texture of meat, which the seitan did a good job of.

I wonder if anyone has tried this before and would have any advice? I can think of all kinds of ways of getting the stuffing in there. Maybe someone has a preferred way of doing this?
