Roasted garlic focaccia from scratch (served it with spaghetti and meatballs)

    Recipe

    (I modified a recipe I found on All Recipes)

    Prep Time: 20 mins
    Cook Time: 20-25 mins
    Additional Time: 30 mins
    Total Time: 50-55 minutes

    Ingredients

    2 ¾ cups all-purpose flour

    1 tablespoon active dry yeast

    1 teaspoon salt

    1 teaspoon kosher salt

    1 teaspoon white sugar

    3 teaspoons dried Italian seasoning blend

    About a handful fresh basil

    As many garlic cloves as your heart desires(or I guess 3-5)

    1 cup warm water (about 110 degrees F)

    About 6 tablespoons olive oil

    Directions

    Preheated oven to 450

    I proofed the yeast first in the water(about 110 degree) with the sugar, and the active dry yeast in the stand mixer bowl.

    Let that get foamy for about 10-15 minutes.

    Used food processor to mince the amount of
    garlic cloves my heart called for, 4 tablespoons of olive oil, fresh basil.

    Then in my Kitchen Aid with the flat beater(because I don’t have a dough hook).

    Added the table salt, dried herbs, and the oil(I used 2 tablespoons of the olive oil mixture), then slowly added the flour and let it go on low for a few minutes until a ball of dough formed.

    I formed it in to the pan I planned to cook it in. And covered with warm damp cloth and placed it on top of the stove.

    Let it rise until it doubled about 20-30 minutes.

    Punched it down. Brushed on a 2 tablespoons of the oil mixture. Sprinkled with kosher salt.

    Baked about 25 minutes until golden brown.

    Added some more olive oil to the remaining mixture, red pepper flakes, more basil, thyme, oregano and some cracked black pepper and kosher salt.
