Sweet and Sour Seitan with Pineapple

    Ingredients:

    * 250g seitan (wheat gluten), presoaked in water
    * 30g wood ears
    * 25g ginger
    * 50g pineapple
    * 20g chili peppers
    * 50g edamame
    * 2 tbsp soy bean paste
    * 2 tbsp tomato ketchup
    * 1/4 tsp black pepper
    * 2 tbsp sugar

    Directions:

    1. Cut the ginger into thin slices, and cut the presoaked seitan into halves.

    2. Seed the chili peppers, then cut them into diagonal pieces. Cut the pineapple into small pieces and tear the wood ears into bits.

    3. Stir-fry the ginger slices and add in the seitan. Then, season with sugar, pepper, ketchup, soy bean paste and a dash of water. Next, add in the wood ear pieces and stir until evenly flavored.

    4. Add in the edamame, seeded chili, and pineapple cuts, and stir well before serving.
