•⅔ cup unsalted butter (softened)
•¼ cup white sugar
•1¼ cups all-purpose flour
•⅓ cup fruit jam
Mix the butter, sugar, and flour to make a crumbly dough, press the dough into an 8×8 baking dish and save a few spoons back for topping. Bake @350F 15 minutes, remove from oven, cover with jam and sprinkle the rest of the dough on top. It doesn’t look great at this point IMO but bake for another 20 minutes and it looks and tastes great!
We just tried this recipe while trying to figure out how to do a cookie tray and how to use up the jams we have sitting in the fridge. This fit the bill! I’ve got the original recipe linked, it seems pretty flexible since we skipped the almonds, used salted butter and a round pie pan and it still turned out. It’s not too sweet either, I could see having this for breakfast/brunch.
