Every New Years Eve I make beer cheese dip and eat it with a giant soft pretzel, bratwurst and broccoli. It’s divine! It lasts about 3 days. The recipe I use is below, has so much cheese and extra calories, I’m wondering if there is a diet friendly version of something similar, so I can still eat pretzels, brats and dessert lol

    It’s just one night and in the big scheme of things it won’t derail your diet. Sometimes it’s nice to indulge during the holidays. Having said that you could make this recipe friendlier by using whole wheat flour and 2% milk. The béchamel will still thicken, although not as tasty as using heavy cream. Use a lighter calorie beer. Use half regular cheddar cheese and half Kraft fat free cheddar cheese. I wouldn’t recommend subbing all the cheese for fat free cheddar as it doesn’t have much taste, it just kinda adds to the cheesy texture.
