Ok guys I’m cooking this bad boy in direct heat at 250 for a hour or so then reverse sear after. I’m hearing different opinions on what side for indirect grilling. So I ask fat cap up or down? And any other tips? Thanks

Why not just use an oven at that point

fat side down for a little insulation. maybe score it?

Fat cap down. The myth of fat cap up to baste has been busted numerous times. However! Fat cap down will insulate against direct heat (like on a charcoal grill) and I find it will crisp up the fat and make it tastier
