Stuffed Peppers Soup

    **Ingredients:**

    * 1 lb ground beef
    * 1 medium onion, diced
    * 2 cloves garlic, minced
    * 1 cup uncooked white rice or quinoa
    * 1 cup beef broth
    * 2 cups water
    * 1 can (14.5 oz) diced tomatoes
    * 1 cup diced bell peppers (red, green, or yellow)
    * 1 tsp dried oregano
    * 1 tsp dried basil
    * 1 tsp paprika
    * 1/2 tsp salt
    * 1/4 tsp black pepper
    * 1/2 cup shredded cheddar cheese or sour cream (optional)

    **Instructions:**

    1. In a large pot or Dutch oven, cook the ground beef over medium heat until it is browned. Add the onion and garlic and cook for an additional 2-3 minutes, until the onion is softened.
    2. Stir in the rice or quinoa, beef broth, water, diced tomatoes, bell peppers, oregano, basil, paprika, salt, and black pepper. Bring the mixture to a boil, then reduce the heat to low and simmer for 20-30 minutes, or until the rice or quinoa is cooked and the bell peppers are tender.
    3. Ladle the soup into bowls and top with shredded cheese or a dollop of sour cream, if desired. Serve hot.
