**Ingredients:**
For the syrup:
* 6 small bananas * 550 ml (2 & 1/3 cup) of water * a pinch of baking soda * 300 grams (1 & 1/2 cup) of coconut sugar
For the pancakes:
* 200 grams (1 cup) of bananas * 1 egg * 100 ml (~1/2 cup) of milk * 80 grams (2/3 cup) of flour * 1 tsp of baking powder * a pinch of salt
**Cooking method:**
For the syrup:
1. Peel the bananas. Put the peels in a bowl and pour warm water over them. Leave for 5-10 minutes, then drain the dirt water. 2. Put the soaked banana peels into a saucepan and fill with water (550 ml). Place on a medium heat and bring to the boil. Then remove from the heat, cover and leave for 8 hours at room temperature. 3. After 8 hours, strain the banana water into another pan. Place on a low heat, add the sugar and bring to the boil. Once boiling, simmer for about 20-25 minutes and then cool to make the syrup thick.
For the pancakes:
1. Cut the bananas into small pieces, put them in a bowl and pour the milk over them. Mash with a fork or blender until smooth. Then add the egg and vanilla extract and mix. After that, add the flour and baking powder and mix again. 2. Bake a small amount of batter in a pan over medium heat until golden. Then place on a plate, pour over the banana syrup, add your favorite berries and enjoy!
