Make your own Superspicy Curry at home!
***- INGREDIENTS -***
**PRODUCE & ETC**
* mint, for garnish * 1 cup jasmine rice * 1 large russet potato * 1 yellow bell pepper * 1 red bell pepper * 1 lbs chicken (chicken breast is great!)
**CURRY**
* 2 tbsp fish sauce * 1/4 cup vegetable oil * 2/3 cup red chili paste (more if you want it spicier) * 1/2 tsp “Da Bomb” hot sauce (optional) * 1/4 cup peanut butter * 1 cup coconut milk * 1 tbsp sugar * salt & pepper to taste
***- INSTRUCTIONS -***
1. Begin by cutting your potato into about 1/4 inch wide quarter pieces. Grab a large pot, put in your cut potatoes, and bring to a boil. Cook until they are fork-tender, then strain. Set cooked potato quarters aside. 2. Next, julienne 1/2 of your yellow pepper, and 1/2 of your red pepper (save the other pepper halves for an omelet, etc), and set those aside. 3. To finish our mise en place, cut your chicken breast into small strips. Set the cut strips aside. 4. This is a good time to start your rice. Put 1 cup rice in a pot with 2 cups water (or whatever your rice instructions say) and cook accordingly. Bring to a boil, then set to low for 15-20 minutes. 5. We are going to begin to build our curry! Put the vegetable oil in a large pot at medium-high heat. Once hot, add in your curry paste and cook until fragrant and slightly darkened, about 2-3 minutes. 6. Once your curry paste has had a chance to darken, add your chicken strips and cook about 75% of the way through. 7. When the chicken strips are 75% of the way cooked through, add in your peanut butter, coconut milk, sugar, “Da Bomb” (optional), and fish sauce. Mix to incorporate, and bring to a simmer. 8. Once your curry is well combined and simmering, add your sliced peppers and cook 3-5 minutes. You can go ahead and salt & pepper here, too! 9. When your peppers have cooked, add your cooked potatoes in and stir. Let it continue to simmer until sauce has thickened.
And that’s it! Assemble your bowl of Superspicy Curry! Add more “Da Bomb” if you want it to be a spicy challenge, this curry definitely packs a punch that could surely knock out King Dedede!
