Recipe
Ingredients;
Ham bone with as much ham as was left on it. Possibly leftover ham if you have it.
Carrots – I think I used 5 I had left in my fridge that were getting a bit old
Celery – the salvageable interior from a wilting one I hadn’t used this week
Onion – one yellow onion I had left
Garlic – most of a head
Bag of navy beans – 1 lb
1 tbs butter
2 tbs olive oil
Spices – I used thyme, sage, cumin, cracked pepper, A special spicey blend my aunt makes that I don’t have the ingredients for (you could use your favorite hot sauce)I measured with my heart for all of them but a tsp of each is a cold starting point. Also salt to taste it depends on the ham

Instructions:
Night before, rinse sort and soak the beans.
Chopped the veggies and sautéed in butter and olive oil ,
added the ham bone after everything was sautéed with the spices. Added the drained rinsed beans. Covered with water and brought to a slight boil.
Boiled for an hour and simmered for 4 adding salt after tasting. Removed ham bone and ate. Enjoy!

I didn’t shop this week and was working with what we have because of the holidays. I managed to squire 3 ham bones that would have been garbage otherwise and used some slightly expired beans (oops, I try to keep them organized by date but my toddler likes to take them out and put them back.) and some slightly old wilting veggies. I felt like I needed something wholesome and fiber rich after all of the holiday food. I’ve had added a potato or two if I had them. This recipe also works with lentils or split peas.
