Cabbage Soup with Riced Cauliflower, Chickpeas and Ground Beef (390 calories for a 3 cup serving)

I’ve been into making an InstaPot full of some stew and eating on it for the week. My usuals are Chili con Carne, Curry Stew (a la Japanese Curry Rice), and some form of Cabbage soup. This is this week’s creation!
I measure my cooking as a “serving” being a cup. So, one cup of this soup is 130 calories! I usually eat 2 or 3 cups for a meal, plus some sides. I’m kind of OMAD. So about 400 calories for a good sized bowl! Similar to some of the Campbell’s Chunky soups, but cheaper. The goal. Get 5 servings out of this pot if 3 cup servings, or 9 2 cup servings.
Basically throw everything together into an InstaPot in your preferred method (I can write mine up if desired), pressure cook for 30 minutes or so. Then I slow cooked it on high for about an hour, about halfway through I removed 4 cups and blended it into a puree and added it back in for a thicker, heartier soup. Add salt to taste.
